A Tiring Day

I like to play badminton, but I'm not fanatic like some of my friends. It is a tiring game compared with gym. This is because badminton involved lots of running, jumping and changing direction. I usually only last for 10 minutes and then i will just stand on the court, watching my friends playing at there. It is very easy to become tired while playing as you need to run to get the shuttle. It is a fast paced and excited sports. I gasping for air after this vigrous excercise. It is really tiring!

I love Chinese Rice Dumplings!!

Ingredients:
5 lb sweet (glutinous) rice
1 bag bamboo leaves
2 lb of pork belly with skin
1/2 pack of Chinese sausage (lop cherng), cut on a diagonal 1/2″ thick
1 bag of salted egg yolk, each yolk cut into 3 pieces (optional)
1 bag dried, peeled mung beans
1 bag (12 oz) shelled plain peanuts, soaked in room temperature water for 25 min, mix into rice, add salt
1/2 cup dried shrimp, soaked in water overnight and drained
salt
pepper
2 tsp soy sauce
1 tsp five spice powder (optional)
2 tsp Chinese cooking wine (optional)
ball of white string
a gigantic pot or 2-3 big pots

Instructions:
1. The night before:
a) Wash bamboo leaves thoroughly by scrubbing or rinsing each piece in the sink. Soak leaves overnight in a pot of warm water.
b) Cut pork belly into 1/2″ to 3/4″ pieces, you should have around 40 pieces. Marinate pieces overnight in the fridge with 1 tsp salt, some pepper, 2 tsp soy sauce, 1 tsp five spice powder, and 2 tsp Chinese cooking wine.
c) Soak dried shrimp in warm water overnight.

Day of cooking:
2. Wash rice in cold water with 3 changes of water. Soak in cold water for 1 hour. Drain in colander for 10 minutes or until no water is dripping out. Then, return rice to bowl and mix in 2 Tbsp salt and 3 Tbsp oil (we use the Chinese ceramic soup spoons). You can also add some soy sauce.
3. In a large pot, boil the leaves for 5 minutes. Then, drain and rinse leaves in cold water. Let the leaves sit in a colander to drain.
4. Soak peanuts for 20 minutes.
5. Rinse mung beans until the water is no longer bright yellow, about 2-3 rinses. Mix in 1/2 tsp salt and bit of oil.
6. Meanwhile, chop Chinese sausage, and salted egg yolks, if using.
7. Assemble all ingredients on a table where you can wrap the zhong comfortably.
8. Watch the video to learn how to wrap zhong. There are other videos on youtube that might help too.

a) Take 2 leaves and hold them together horizontally, offset by 1″, with your palms facing down. Fold the leaves in half and make a notch at the bottom incorporating both leaves in the fold. This makes a pocket for the rice so it cannot leak out.
b) Put a scoop of rice (about 1/4 to 1/3 cup).
c) Put a tsp of mung beans on top of the rice.
d) Take another leaf and it around the walls of the pouch so it makes a higher wall.
e) Add 2 or 3 shrimps, 1 piece each of fatty pork, sausage and egg yolk.
f) Add another tsp of mung bean and cover everything with another scoop of rice.
g) Fold the walls together towards the previous notch to enclose the filling. Turn the zhong so that the only opening is now facing up. Tap the zhong to settle the rice downwards.
h) Finally, while holding the zhong so that a bottom corner is facing you, fold down the remaining leaves by pressing a straight line at the top edge of the filling. The fold should be in the direction towards you or away from you (toward either of the two bottom corners).
i) Hold the string, leaving a foot long tail) and use the part connected to the roll to wrap one half of the horizontal zhong four times. Then, switching hands, wrap the other half of the zhong using the tail end of the string, 3-4 times. Make the two strings meet in the middle and wrap the zhong twice vertically. Tie off leaving two tails. (Wrap it once vertically for peanut).
9. After wrapping around 20 mung bean zhong or until you have half the rice remaining, mix in the drained peanuts with the rice and add an additional teaspoon of salt. Follow the same steps to wrap zhong except leave out the mung beans.
10. Place 3 leaves at the bottom of each pot. Place zhong into pots. Fill with water and cover. Bring to a boil and reduce heat to medium (stove dial 5) and cook for 3 1/2 hours. Leave the lid open a crack if it keeps boiling over. Keep hot water on hand to replenish evaporated water.
11. Enjoy warm or at room temperature. Store in the fridge for about a week or freeze. Reheat by boiling or steaming.

Notes: These zhong are savory, not sweet. Sweet rice is the name for glutinous rice that turns sticky and is not named that way because it’s sweet in taste. On the day of, I started at 11 AM and finished boiling everything at 5 PM. Once I filled up the first pot at 12:30 PM, I put it to cook and then finished up the rest by 1:30 PM. It goes A LOT faster if you have more hands to help. You get a lot faster once you figure out how to wrap and tie them.

Count On Me - Bruno Mars

If you ever find yourself stuck in the middle of the sea
I'll sail the world to find you
If you ever find yourself lost in the dark and you can't see
I'll be the light to guide you

Find out what we're made of
What we are called to help our friends in need

You can count on me like one, two, three
I'll be there and I know when I need it
I can count on you like four, three, two
And you'll be there 'cause that's what friends
Are supposed to do, oh yeah, ooh, ooh

If you toss and you turn and you just can't fall asleep
I'll sing a song beside you
And if you ever forget how much you really mean to me
Everyday I will remind you

Find out what we're made of
What we are called to help our friends in need

You can count on me like one, two, three
I'll be there and I know when I need it
I can count on you like four, three, two
And you'll be there 'cause that's what friends

Are supposed to do, oh yeah, ooh, ooh, yeah, yeah

You'll always have my shoulder when you cry
I'll never let go, never say goodbye

You can count on me like one, two, three
I'll be there and I know when I need it
I can count on you like four, three, two
And you'll be there 'cause that's what friends
Are supposed to do, oh yeah, ooh, ooh

You can count on me 'cause I can count on you

Happy Wesak Day

PM's Wesak Day message: Remember values cherished by all religions

KUALA LUMPUR: Prime Minister Datuk Seri Najib Tun Razak wants Malaysians to overcome disputes and misunderstandings by reminding themselves of the values that all religions cherish, while taking the route of moderation.
He said all religions taught the value of kindness and respect towards one another, regardless of race, ethnicity, creed and background.
Najib said he was able to appreciate the diversified religious celebrations in the country and observed that all religions also shared common values of humanity and moderation.
Such values should be cherished by all, he added.
"Although, occasionally, disputes and misunderstandings may threaten to dislodge the peaceful environment we live in, I sincerely believe we can overcome them by reminding ourselves of this simple value that all religions cherish and take the route of moderation," he said in his Wesak Day message uploaded in his blog here Monday.
Buddhists will be celebrating Wesak Day Tuesday.
Meanwhile, MCA president Datuk Seri Dr Chua Soi Lek, in his Wesak Day message, said there was no place for religious zealots and that moderation in politics must be upheld and emphasised.
"We must not allow ourselves to be entrapped in the politicisation of racial and religious issues.
"Irrespective of our religion, no one should use religion for political reasons.
"It is a recipe for disaster when race, religion and politics are put together. Malaysia cannot accept such a trend," he said.
Dr Chua said MCA did not condone extremism and Malaysians must join forces to put a stop to spoilers of unity and peace in the country.
"Wesak is the day we should reflect on the pureness of our hearts to extend a helping hand to the helpless, needy and give thanks to those who have made it possible for Malaysia to prosper.
"On this day, we should also reaffirm our commitment to peace," he said.

Accepting Oneself

It is a strange phenomenon how difficult people find it to love themsleves. One would it is the easiest thing in the world, because we are constantly concerned with ourselves. We are always interested in how much we can get, how well we can perform, how comfortable we can be. So with all that, why it is so difficult to actually love oneself?

My favourite Breakfast

I am not one for fancy breakfast. Toast dipped with half boiled eggs, is absolutely my favourite breakfast. The creamy richness of the eggs, combined with the crunchy toastiness of the bread, this really warm my soul in the early morning. However, I have never mastered the technique to boil a half-boiled eggs. Reading newspapers when the moment having my toast dipped with half-boiled is totally perfect! Yummy~

To be Grateful

People from the beginning of time have struggled with the question of how we can live in the present moment.  And it is a challenge that become particularly in the modern world in which are constantly lured by vision of greater glory and fame. if we learn to be grateful, we can fulfill the challenge of living in the present. Gratitude fills our heart with the joyful feeling and allows us to fully appreciate everything that arises on our path. To feel better, we need to think better. : )

Raining Day

It was raining cats and dogs when the moment I came back from my hometown. I like raining day but not walking in the rain. My bag was wet and my shoes were wet with mud. It is not romantic at all. The sky was gray and I am blue. The thunder rolls and the lightning flashes. Fortunetely, I am not alone at home. Otherwise I will curl up and hide under my blanket again. I am scared of thunder. It is childish but I am.

Books

Books are a guide in youth and an entertainment for age. They support us under solitude, and keep us from being a burden to ourselves.
                                                                                                          - Jeremy Collier

Great book are the most readable.  They will not let you down if you try to read them well. They have more ideas per page than most books have in their entirely. However, I always do not finish the whole book and they will keep be  in the bookshelf. Unless, I'm totally free.  I need a larger bookshelf since my books are "double parking" in the bookshelf already. Otherwise, i have to stop buying any books. This is impossible...

A Fairy Tale Drama

I watched a Korean drama this week, Secret Garden. Thanks to my friend, Jia Xian. She is the one who recommend this drama for me. It's really a romantic and fantasy drama. I'm totally crazy for this drama and sleep at 2am for the whole week. This is a typical Korean drama. Their story always start with a handsome and wealth guy. How perfect he is. A dream man for most of the girls. What I like is the actress, she is a poor and humble stuntwoman. She is active and cheerful. The story like a fairy tale, their soul was exchanged. They began to start a new life which is totally different like before. This creates lots of funny scene.
